Snack - Fruit, Yoghurt and Goji Berries with Honey

If you need a healthy and replenishing snack during the day, this quick fix would do it. It is very refreshing and nutritious and perfect for summer. You can change ingredients as much as you like as long the main ones would be yoghurt and honey because I think that is the best part of this snack. :)

This is packed with vitamins from the strawberries, filling because of the banana and the honey is also an anti-oxidant. Goji berries are good for the immune system and also female hormonal system in particular.

Ingredients
  • 4 strawberries
  • 1/2 banana
  • 1/2 cup greek yoghurt
  • 1 tbs honey
  • 1 tbs goji berries

Cooking Directions
  1. -Just chop the fruit and mix everything else together. Simple as that!

Note: You can choose whatever fruit you want and you can add nuts or sultanas and raisins, whatever you desire and feel like.

Beetroot and Carrot Soup with Coconut Cream

Lovely, light but filling beetroot and carrot soup beautifully done by mum. :) Beetroots are very healthy with a lot of vitamins and their leafy greens are the most nutritious. Apart from being healthy, they are very tasty and together with carrots make a perfect marriage since the carrots give a nice sweetness. Carrots also have a lot of carotene which is also a very nutritious component. It has a velvety taste from the beets which I really like and very is very substantial as some may think that cream soups are not enough or not too filling. Also added is coconut cream which makes it very smooth and creamy.

Cauliflower and Broccoli Soup

Winter is wonderful for warm comfort food and we normally opt for carbs like pasta, pastries and pizza to give pleasure to our tastebuds and let our cold feet get cosier without heating commodities. Well that's why we do eat more in winter and we generally gain more weight during this season unlike summer. Although soups have a reputation that warm you up in winter, we still make excuses just to go for a lovely big bowl of 'Mac n Cheese' right?!

Well I challenge you to try out soups and make a variety, because there really are different recipes to cook. My personal favourites are, pumpkin, mushroom, pea, onion, vegetable, broccoli, cauliflower...... well i have better skipped the favourites part i'm noticing!

Anyway, mum did some great cauliflower and broccoli soup and I think it was wonderful, fills you up, warm with every spoon full. Pretty easy to put together.

Method is quite easy, just fry or sauté everything in a pan (i'll give you the ingredients below), add water or any stock leftover you have, bring to a boil and let to simmer until everything is tender to mesh up. That's it!

Ingredients:

1 Onion chopped
1 Garlic clove chopped
1/2 or 1 whole cauliflower cut in small florets
1/2 or 1 whole broccoli cut in small florets
Any type of beans desired
1 Table spoon of tomato paste
Seasoning as desired
Chopped celery
Parmesan shavings for serving
