Cauliflower and Broccoli Soup

Winter is wonderful for warm comfort food and we normally opt for carbs like pasta, pastries and pizza to give pleasure to our tastebuds and let our cold feet get cosier without heating commodities. Well that's why we do eat more in winter and we generally gain more weight during this season unlike summer. Although soups have a reputation that warm you up in winter, we still make excuses just to go for a lovely big bowl of 'Mac n Cheese' right?!

Well I challenge you to try out soups and make a variety, because there really are different recipes to cook. My personal favourites are, pumpkin, mushroom, pea, onion, vegetable, broccoli, cauliflower...... well i have better skipped the favourites part i'm noticing!

Anyway, mum did some great cauliflower and broccoli soup and I think it was wonderful, fills you up, warm with every spoon full. Pretty easy to put together.

Method is quite easy, just fry or sauté everything in a pan (i'll give you the ingredients below), add water or any stock leftover you have, bring to a boil and let to simmer until everything is tender to mesh up. That's it!



Ingredients:

1 Onion chopped 
1 Garlic clove chopped 
1/2 or 1 whole cauliflower cut in small florets 
1/2 or 1 whole broccoli cut in small florets
Any type of beans desired
1 Table spoon of tomato paste
Seasoning as desired 
Chopped celery 
Parmesan shavings for serving
